“They’re good for you to eat — they have good vitamins and minerals,” said Mary Redding, one of the owners of Fish Camp. “There really is nothing bad about an oyster.”

Redding’s Oystergirl will operate alongside a bounty of other delicious food like lobster rolls, pupusas, and pork sandwiches, reaffirming the Flea as a food destination to rival the Red Hook ball fields.

Redding added that the oysters will be purchased from farmers in Massachusetts that cultivate and harvest the mollusks on farms generally no larger than five acres.

“They’re all from the Cape [Cod], but just the slightest change in location changes the flavor, the size,” she said, adding that oysters from Rhode Island and Connecticut may also be for sale this summer, too.

The restaurateur’s enthusiasm for the environmentally friendly creatures was obvious — she said she wasn’t even sure if Oystergirl would make money, given that people will likely only be buying one or two while they shop.

“It will be a great thing to do in the summer, there is always great food [at the Flea],” Redding said. “It will be fun, something different.”
