Prospect Restaurant to Open Friday on Fulton Street

Highly anticipated American-inspired eatery in former Aqualis Grill space.

After months of planning, preparation and construction, Prospect Restaurant will make its debut Friday on Fulton Street.

The restaurant, owned by former Packer Collegiate classmates Alan Cooper and Stephen Cohen and headed by executive chef Kyle McClelland, was one of three soon-to-be-opened businesses profiled in our take on Fort Greene's changing restaurant and retail scene.

The restaurant will have 46 seats including a sit-down counter and full bar. Among the offerings will be Smoked Hamachi paired with cucumber, citrus trout roe, spicy pepper emulsion and micro basil and Pork Jowl with garlic, baby leeks and golden carrots.

According to the owners, plates will be from $19 to $29 with a tasting menu from $35 to $80.

The interior made "waves" earlier this year with word of an unorthodox building material: pieces of Coney Island's boardwalk.
