'New American' Cuisine Set to Debut In Old Aqualis Grill Space

Brooklyn-bred restaraunteurs look to make a go of it on Fulton Street.

In the latest sign of Fort Greene's culinary ascendancy, a new fine dining restaurant is on tap for Fulton Street.

Prospect, a restaurant serving "modern New American" cuisine, will open this summer at the now-empty space between S. Portland Avenue and S. Oxford Street.

Founded by Packer Collegiate classmates Alan Cooper and Stephen Cohen, the restaurant seeks to succeed where the Mediterranean-inspired Aqualis failed with a moderately priced fresh seafood-inspired menu created by chef Kyle McClelland.

And while Cooper admitted the economy was still "a problem for everyone involved," his team still believed the location and Prospect's "clean approach to cooking" would take the day.

"Fulton Street is going through a rebirth and that's something we hope to take advantage of," he said.

Prospect is located at 773 Fulton St. The opening of the restaurant is slated for late summer.
